I try to eat healthy. I really do, but no one is every going to accuse me of turning my back on junk food. Just yesterday I had pizza for lunch (after the gym, no less), and I would probably die if I had to give up Diet-Pepsi. So, out of guilt, I try to find ways to replace my favourite unhealthy meals with healthier versions.
That’s why tonight when I was craving sweet sweet pizza I broke out a recipe I’ve used a few times before. It’s a gluten-free, carb-free pizza crust. With just three ingredients it’s simple, it’s loaded with nutrients, and it makes up about half of your daily recommended fibre intake. I halved this recipe, and find that it’s still generous enough to feed two people.
I’m sure this would be amazing with some simple sauce and veggies, but I went crazy and emptied out my fridge. I topped my low carb pizza with ground sirloin, goat cheese, sharp cheddar, spinach, roasted red pepper, and some green onion. Delicious!
Gluten-Free, Zero Carb Pizza Crust:
1/4 cup grated parmesan cheese (you can use less and this will still turn out fine)
